Those will collect just Teams Calls or will take PSTN Calls as well?

By default (in current release) Viva Insights only uses the data obtained from Microsoft Teams calls.
You might want to consider the option of adding PSTN call data during your HR upload - however this process is most likely quite manual and time-consuming.
